Description
Aromatic samsa made of thin dough with juicy filling of beef, lamb tail fat and onion. A healthy version: whole wheat flour, minimal oil, lots of meat and spices.
- Sift the whole wheat flour with salt, add hot water and sunflower oil, and knead an elastic dough.
- Cover the dough and let it rest for 20–30 minutes at room temperature.
- Cut the beef and lamb tail fat into small cubes, chop the onion very finely.
- Mix the meat, tail fat, onion, add water, dried garlic, cumin and salt. Stir the filling until uniform.
- Roll out the dough into a thin layer, brush with melted butter, roll it up, cut into pieces and roll each into a flatbread.
- Place the filling on each flatbread and pinch the edges into a triangle or crescent shape.
- Brush the samsa with egg yolk and sprinkle with sesame seeds.
- Bake at 200 °C for about 30–35 minutes until golden brown.
