Description

Crispy cheese croquettes with ham and aromatic cranberry sauce.

  1. Grate the processed cheese and Maasdam cheese on a fine grater.
  2. Cut the ham into very small cubes.
  3. Mix both types of cheese, ham, dried garlic, and finely chopped parsley until a homogeneous sticky mass forms.
  4. Form small balls (croquettes) from the cheese mixture, about the size of a walnut.
  5. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  6. Roll each ball in flour first, then dip in egg, and coat thoroughly with breadcrumbs.
  7. Heat sunflower oil for deep frying to 180°C in a saucepan or deep fryer.
  8. Fry the croquettes in batches for 2-3 minutes until golden and crispy.
  9. Place the finished croquettes on a paper towel to remove excess oil.
  10. Prepare the sauce: combine frozen cranberries and sugar in a small saucepan.
  11. Bring the cranberries and sugar to a boil and simmer over low heat for 5-7 minutes, until the berries burst and the sauce thickens slightly.
  12. Lightly mash the berries with a spoon or leave the sauce with whole berries, as desired.
  13. Serve the hot cheese croquettes with the warm or cooled cranberry sauce.
