Description
Hearty and flavorful warm salad with baby potatoes, juicy tomatoes, smoked chicken and crispy bacon with a mustard-honey dressing.
- Thoroughly wash the potato and boil it in its skin until tender (about 15-20 minutes after boiling). Cool, peel and cut into slices or wedges.
- Boil the egg hard-boiled (8-9 minutes after boiling), cool, peel and cut into 4 quarters.
- Wash the cherry tomatoes and cut them in half. Cut the bacon slice into small strips and the smoked chicken breast into thin slices.
- Make the dressing: in a small bowl, combine whole-grain mustard, honey, apple cider vinegar and olive oil. Whisk with a fork until emulsified.
- In a frying pan with a little sunflower oil, fry the bacon strips over medium heat until crispy (2-3 minutes).
- In a large bowl, combine the salad mix, sliced potatoes, cherry tomato halves, smoked chicken slices and fried bacon.
- Drizzle the salad with the prepared dressing and toss gently.
- Place the salad on a plate and top with the egg quarters. Serve immediately, while the potatoes and bacon are still warm.
