Description

Fragrant Georgian stew with veal, herbs, cherry plum and white wine. A traditional spring dish.

  1. Cut the veal into medium-sized portions.
  2. Finely chop cilantro, parsley, tarragon and green onion.
  3. Crush and finely chop the garlic. Slice the chili pepper into thin rings.
  4. Melt butter in a heavy-bottomed pot and lightly brown the meat.
  5. Add half of the chopped herbs, garlic, chili and cherry plum to the meat. Stir.
  6. Pour in dry white wine, add salt and pepper. Bring to a boil.
  7. Reduce heat to low, cover and simmer for 60-70 minutes until meat is tender.
  8. Add the remaining herbs 5 minutes before done and stir.
  9. Serve hot, optionally with flatbread.
