Georgian Chakapuli with Veal and Cherry Plum
Description
Fragrant Georgian stew with veal, herbs, cherry plum and white wine. A traditional spring dish.
- Cut the veal into medium-sized portions.
- Finely chop cilantro, parsley, tarragon and green onion.
- Crush and finely chop the garlic. Slice the chili pepper into thin rings.
- Melt butter in a heavy-bottomed pot and lightly brown the meat.
- Add half of the chopped herbs, garlic, chili and cherry plum to the meat. Stir.
- Pour in dry white wine, add salt and pepper. Bring to a boil.
- Reduce heat to low, cover and simmer for 60-70 minutes until meat is tender.
- Add the remaining herbs 5 minutes before done and stir.
- Serve hot, optionally with flatbread.
