Shah Pilaf

Festive Azerbaijani pilaf in lavash with beef, dried fruits and nuts

White polished rice — 80 г

Beef (ribs) — 80 г

Ghee (clarified butter) — 18 г

Onion — 0.25 шт

Seedless raisins (sultanas) — 13 г

Dried apricots (apricots) — 13 г

Barberry — 4.3 г

Cherry plum — 28 г

Walnuts — 8 г

Saffron — 1 г

Ground turmeric — 0.5 ч.л.

Armenian lavash (thin flatbread) — 1 лист

Table salt — 1 щепотка
- Boil rice in salted water until half-cooked, drain.
- Cut beef into large pieces.
- Melt half of the ghee in a cauldron and fry beef until golden brown. Salt, simmer for 5 minutes and set aside.
- Pour boiling water over saffron and let it steep.
- Slice onion into strips. Add remaining ghee to the cauldron and fry onion until golden.
- Add dried apricots, raisins, barberry and walnuts to onion. Simmer for 10 minutes.
- Remove from heat, add turmeric and cherry plum, stir.
- Grease a lavash sheet with ghee and place on the bottom of the cauldron, leaving edges hanging over.
- Drizzle saffron water over rice in stripes.
- Layer half the rice, then dried fruits with onion, then meat, and cover with remaining rice.
- Cover with lavash and fold edges to the center.
- Cover cauldron with lid and cook over low heat for 30 minutes.
- Flip cauldron onto a serving plate, remove and serve pilaf in crispy lavash crust.
