Description

Thin unleavened flatbreads filled with spinach, herbs and grainy cottage cheese, pan-fried on a dry skillet

  1. Sift the flour into a bowl, add salt and gradually pour in water, kneading an elastic dough. Cover with plastic wrap and leave for 20-30 minutes.
  2. Wash spinach and green onions, pat dry and chop finely.
  3. Mix chopped greens with grainy cottage cheese, season with salt to taste. The filling is ready.
  4. Divide the dough into 6 equal parts, roll each thinly into a circle about 20 cm in diameter.
  5. Place the filling on one half of the flatbread, leaving 1-1.5 cm from the edge. Cover with the other half and pinch the edges.
  6. Heat a dry skillet over medium heat. Fry the qutabs for 2-3 minutes on each side until golden spots appear.
  7. Brush the finished qutabs with butter on both sides and stack them to keep them soft.
  8. Serve hot, optionally with matsoni or natural yogurt.
