Cheese Quesadilla with Chicken, Corn and Salsa
Description
A quick and hearty snack of tortilla filled with chicken, corn and melted cheese, served with a fresh tomato salsa.
- Remove the skin from the smoked chicken leg, separate the meat from the bone and cut it into small pieces.
- Grate the cheese on a coarse grater.
- For the salsa: dice the tomato, finely chop the cilantro. Mix in a bowl, add the juice of a quarter lime, sugar and salt. Stir and set aside.
- Place the chicken, corn on one half of the tortilla and generously sprinkle with cheese.
- Fold the tortilla in half, covering the filling.
- Heat a dry skillet over medium heat and fry the quesadilla on both sides until golden brown and the cheese is completely melted (about 2-3 minutes per side).
- Cut the finished quesadilla into triangles and serve with fresh tomato salsa.
