Description

A quick and hearty snack of tortilla filled with chicken, corn and melted cheese, served with a fresh tomato salsa.

  1. Remove the skin from the smoked chicken leg, separate the meat from the bone and cut it into small pieces.
  2. Grate the cheese on a coarse grater.
  3. For the salsa: dice the tomato, finely chop the cilantro. Mix in a bowl, add the juice of a quarter lime, sugar and salt. Stir and set aside.
  4. Place the chicken, corn on one half of the tortilla and generously sprinkle with cheese.
  5. Fold the tortilla in half, covering the filling.
  6. Heat a dry skillet over medium heat and fry the quesadilla on both sides until golden brown and the cheese is completely melted (about 2-3 minutes per side).
  7. Cut the finished quesadilla into triangles and serve with fresh tomato salsa.
