Description

Hearty cutlets made of buckwheat and ground beef, stewed in a delicate creamy sauce with smoked cheese.

  1. Boil the buckwheat groats in salted water until cooked (about 15-20 minutes). Let cool.
  2. Finely chop half an onion. Fry in half of the vegetable oil until translucent (2-3 minutes).
  3. Mix the ground beef, cooked buckwheat, and half of the fried onion. Season with salt and pepper.
  4. Form 2-3 cutlets from the mixture.
  5. Coat the cutlets in breadcrumbs.
  6. Fry the cutlets in the remaining oil on both sides until golden brown (about 3-4 minutes per side).
  7. Pour the cream over the cutlets, add the remaining onion and paprika. Simmer over low heat for 10 minutes.
  8. Grate the suluguni cheese. Sprinkle the cheese over the cutlets 2 minutes before they are done, allowing it to melt.
  9. Serve hot, drizzled with the creamy sauce.
