Healthy Zucchini and Chicken Breast Burger
Description
An original low-carb burger where the buns are replaced with baked zucchini rounds. A juicy chicken patty and fresh vegetables make this snack as healthy as possible.
- Slice the zucchini into thick rounds (about 1.5 cm). Select the 2 largest and most even ones — they will replace the buns.
- Place the zucchini rounds on a parchment-lined baking sheet, lightly salt, and bake in a preheated 200°C oven for 10–12 minutes until semi-soft.
- Grind the chicken fillet into minced meat using a blender or meat grinder. Season with salt and pepper, and shape into a round patty.
- Fry the patty on a non-stick pan without oil for 5–6 minutes on each side until golden brown and fully cooked.
- Slice the tomato into rounds, grate the cheese on a coarse grater.
- On one baked zucchini round, layer a lettuce leaf, the patty, sprinkle with cheese, add tomato slices and guacamole sauce.
- Cover with the second zucchini round. Secure with a skewer if desired. Serve warm.
