Finnish Creamy Salmon Soup
Description
Delicate Scandinavian soup with salmon, potatoes and cream — a warming and healthy lunch.
- Peel the potato, carrot and onion. Dice the potato, slice the carrot thinly, and finely chop the onion.
- Melt butter in a pot, add onion and carrot, sauté for 2–3 minutes until softened.
- Pour in water, bring to a boil, add potato, bay leaf and peppercorns. Cook for 10 minutes over medium heat.
- Cut the salmon into 2–3 cm cubes, add to the soup and cook for 5–7 minutes until the fish is done.
- Pour in the cream, add salt, heat on low for 2–3 minutes without boiling.
- Remove from heat, discard bay leaf, sprinkle with finely chopped dill and let rest for 5 minutes before serving.
