Description

Delicate Scandinavian soup with salmon, potatoes and cream — a warming and healthy lunch.

  1. Peel the potato, carrot and onion. Dice the potato, slice the carrot thinly, and finely chop the onion.
  2. Melt butter in a pot, add onion and carrot, sauté for 2–3 minutes until softened.
  3. Pour in water, bring to a boil, add potato, bay leaf and peppercorns. Cook for 10 minutes over medium heat.
  4. Cut the salmon into 2–3 cm cubes, add to the soup and cook for 5–7 minutes until the fish is done.
  5. Pour in the cream, add salt, heat on low for 2–3 minutes without boiling.
  6. Remove from heat, discard bay leaf, sprinkle with finely chopped dill and let rest for 5 minutes before serving.
