Description

Aromatic and moist pumpkin bake with the addition of flaxseed flour and poppy seeds. A simple and healthy tea-time dessert that is tender inside with a crispy crust outside.

  1. Preheat the oven to 180°C (350°F). Peel the pumpkin, remove seeds, and finely grate it or blend it into a puree.
  2. In a deep bowl, combine the pumpkin puree, sugar, and sunflower oil. Whisk until smooth.
  3. Add the apple cider vinegar and baking soda. The mixture will start to foam slightly — this is a normal reaction.
  4. In a separate bowl, mix the wheat flour, flaxseed flour, cinnamon, and poppy seeds. Gradually add the dry ingredients to the pumpkin mixture, kneading a thick batter.
  5. Line a small baking dish with parchment paper. Pour in the batter and smooth the top with a spatula.
  6. Bake in the preheated oven for 35–40 minutes until a toothpick comes out clean. Cool the baked bar, cut into portions, and sprinkle with powdered sugar.
