Description

Juicy cod in a crispy onion batter served with an original sweet and sour gooseberry and mint sauce.

  1. Thaw the cod fillet, pat dry with a paper towel, cut into portions, season with salt and pepper.
  2. Grate a quarter of an onion on a fine grater or blend into a pulp.
  3. In a bowl, combine the egg, mayonnaise, flour, and grated onion. Season with salt and pepper. Mix thoroughly until smooth.
  4. Heat sunflower oil in a small saucepan or high-sided frying pan to 170-180°C (340-350°F).
  5. Dip each piece of cod into the onion batter, letting excess drip off.
  6. Carefully place the fish into the hot oil and deep-fry until golden brown, about 3-4 minutes per side.
  7. Place the cooked fish on a paper towel to absorb excess oil.
  8. For the sauce: in a small saucepan, combine gooseberries, sugar, and 1 tablespoon of water. Bring to a boil and simmer on low heat for 3-4 minutes until the berries soften.
  9. Remove from heat, add finely chopped mint and adjika. Stir and lightly mash the berries with a fork.
  10. Serve the cod hot, drizzled with gooseberry sauce.
