Swedish Meatballs with Lingonberry Sauce
Description
Classic Swedish meatballs with a creamy sauce and sweet-and-sour lingonberry jam, just like at IKEA. Served with mashed potatoes.

- Soak the bread in 20 ml of cream or water until soft.
- Pass the beef, pork, and onion through a meat grinder or chop finely.
- Mix the minced meat with soaked bread, egg, breadcrumbs, salt, and white pepper.
- Form small meatballs about the size of a walnut.
- Heat sunflower oil in a frying pan and fry the meatballs on all sides until golden brown.
- Reduce heat, add a little water (about 50 ml), and simmer covered for 10-15 minutes until cooked.
- Make the lingonberry sauce: mix lingonberries with sugar and 30 ml water, bring to a boil and cook for 5 minutes.
- Dissolve starch in 1 tsp of cold water and pour into the lingonberry sauce, stirring until thickened.
- For the mash: peel potatoes, boil in salted water until tender, drain the water.
- Mash the potatoes, add butter and remaining cream, mix until smooth.
- For the cream sauce: melt butter in a saucepan, add flour, lightly fry.
- Pour in the remaining water and 10 ml of cream, stirring until thickened, season with salt to taste.
- Serve meatballs with mashed potatoes, cream sauce, and lingonberry sauce.
