Scotch Eggs with Potatoes
Description
Hearty dish of eggs wrapped in a meat shell with crispy breading, deep-fried, served with creamy mashed potatoes and sour cream sauce.
- Boil 1 egg hard-boiled (8-9 minutes), cool and peel.
- Peel potatoes, cut into cubes and boil in salted water until tender.
- Finely chop the onion and dill, press the garlic.
- Mix ground pork with onion, garlic, salt and pepper.
- Wrap the peeled egg with a layer of minced meat, forming a tight ball or patty.
- Dredge the blank in flour, then in the beaten remaining egg and in breadcrumbs.
- Heat sunflower oil in a small saucepan or sauté pan to 170-180°C.
- Fry the egg in deep fryer for 5-7 minutes until golden brown, then place on a paper towel.
- Drain the potatoes, mash them, add sour cream, salt and dill, mix into a puree.
- Serve the Scotch egg with mashed potatoes.
