Meatballs in Lecho Sauce with Rice
Description
Juicy meatballs stewed in a flavorful lecho sauce, served with fluffy rice. A simple and hearty lunch.
- Finely chop half an onion and fry in sunflower oil until soft.
- Mix ground beef and pork, add salt, pepper and half of the fried onion. Mix well.
- Form small round meatballs from the mixture.
- Heat the remaining oil in a pan and fry the meatballs on all sides until golden brown.
- Add lecho and remaining fried onion to the meatballs. Cover and simmer on low heat for 20-25 minutes.
- While meatballs are simmering, boil rice in salted water until tender.
- Place rice on a plate, top with meatballs and pour over lecho sauce.
- Chop parsley finely and sprinkle over the dish before serving.
