Description
A light winter salad of ripe persimmon, mandarins and tangy goat cheese with a honey-mustard dressing. A bright, sunny French dish ready in minutes.
- Take the goat cheese out of the fridge in advance — at room temperature it is easier to crumble by hand.
- Make the dressing: in a bowl, combine olive oil, Dijon mustard, honey, lemon juice and salt. Whisk with a fork or mini-whisk until smooth so the honey dissolves completely.
- Peel the persimmon (a vegetable peeler works well) and cut into large pieces. Choose a firm but ripe persimmon — it holds its shape when sliced.
- Peel the mandarin, separate into segments and remove all white membranes, otherwise they will add bitterness.
- Combine the persimmon and mandarin in a salad bowl. Crumble the goat cheese on top, season with freshly ground pepper and drizzle with the dressing just before serving. Serve immediately.
