No-Bake Cottage Cheese and Berry Mousse Cake
Description
A delicate and healthy no-bake dessert based on cottage cheese and fresh berries. Ideal for healthy eating.
- Pour cold water (30 ml) over gelatin and leave to swell for 10-15 minutes.
- Blend strawberries (50g) in a blender until pureed. Slice remaining 20g of berries for garnish.
- In a separate bowl, blend cottage cheese, berry puree and stevia with a blender until smooth cream.
- Heat the swollen gelatin in a water bath or microwave (short pulses) until completely dissolved, but do not boil.
- Pour melted gelatin into the cottage cheese-berry mixture in a thin stream, constantly stirring with a whisk or mixer on low speed.
- Take a small mold (silicone or ramekin), grease the inside with coconut oil. Place half the mousse, then pieces of fresh strawberries, and pour remaining mousse over top.
- Refrigerate the cake for at least 3-4 hours (preferably overnight) until fully set.
- Before serving, dip the mold in hot water for a few seconds and invert the cake onto a plate. If desired, garnish with remaining berries.
