Vietnamese Banh Mi Sandwich

Homemade version of the popular Vietnamese sandwich with chicken liver, pickled vegetables and spicy sauce

Apple cider vinegar — 0.5 ст.л.

Granulated sugar — 1 щепотка

Chili pepper (fresh, hot) — 0.25 шт

Cilantro (coriander, fresh) — 1 веточка

Table salt — 1 щепотка

Mayonnaise "Provencal" 67% fat — 18 г

Tomato sauce (ketchup) — 18 г

Soy sauce — 1 ст.л.

Ginger (root) — 2.2 г

Garlic — 1 зубчик
- Cut carrots and cucumber into thin strips, add apple cider vinegar and a pinch of sugar, mix and leave to marinate for 10 minutes
- Finely chop onion, garlic and ginger
- Heat a pan with sunflower oil, fry onion until soft
- Add chicken liver to the pan, season with salt and fry until cooked through, about 7-10 minutes
- Add butter and half of the soy sauce to the liver, simmer for 2 more minutes
- Mix mayonnaise with ketchup, remaining soy sauce, grated garlic and ginger to make the sauce
- Cut the baguette lengthwise without cutting all the way through
- Spread the prepared sauce on the inside of the baguette
- Place the fried liver on the bottom part of the baguette
- Add pickled vegetables, thinly sliced Chinese cabbage, chili pepper rings and cilantro leaves on top
- Close the sandwich with the top part of the baguette and press lightly
