Description

Flavorful Greek tomato fritters with feta cheese and herbs, served with a refreshing tzatziki sauce.

  1. Dice the tomato into small cubes and gently squeeze out excess juice.
  2. Finely chop the onion and parsley.
  3. In a bowl, mix the tomatoes, onion, parsley, crumbled feta, flour, baking powder, salt, and pepper.
  4. Stir until a thick batter forms.
  5. Heat a pan with sunflower oil.
  6. Spoon the mixture into the pan to form small fritters. Fry for 3-4 minutes per side until golden brown.
  7. For the sauce: grate the cucumber and squeeze out the juice.
  8. Mix Greek yogurt, cucumber, minced garlic, finely chopped mint, olive oil, and wine vinegar.
  9. Season the sauce with salt and pepper to taste.
  10. Serve the fritters hot with tzatziki sauce.
