Description

Spicy and hearty soup with ground beef, two types of beans, corn and chili. Bright Mexican flavor.

  1. Soak beans overnight or use canned beans, rinsed from liquid.
  2. Boil beans in salted water until tender (if using dried).
  3. Finely chop onion, garlic, bell pepper and chili pepper.
  4. Heat sunflower oil in a pot and fry ground beef until browned, breaking up lumps with a spatula.
  5. Add onion, garlic, bell pepper and chili to the beef. Sauté for 3-4 minutes until soft.
  6. Dice tomatoes and add to the pot. Cook for 5 minutes.
  7. Add tomato paste, sugar, paprika and chili flakes. Stir and cook for another 2 minutes.
  8. Pour 300 ml of hot water into the pot. Bring to a boil.
  9. Add cooked beans and corn. Simmer over medium heat for 10-15 minutes.
  10. Season with salt to taste. Remove from heat.
  11. Serve hot, garnished with chopped cilantro and a lime wedge.
