Penne in Tomato Sauce with Tuna, Olives and Blue Cheese
Description
A quick and hearty pasta with canned tuna, a spicy tomato sauce, olives, and tangy blue cheese. Perfect for a solo dinner.
- Cook the penne in salted water according to package instructions until al dente. Drain, reserving a little pasta water.
- While the penne is cooking, finely chop the garlic and chili pepper (remove seeds for less heat).
- Heat a pan with a little olive oil (if available) and sauté the garlic and chili for 30 seconds until fragrant.
- Add the tomato paste and water, stir. Bring to a boil and simmer for 2-3 minutes to thicken slightly.
- Add the drained canned tuna and sliced olives to the sauce. Warm through for 2 minutes.
- Add the cooked penne to the pan and toss with the sauce. If needed, add a little pasta water to reach the desired consistency.
- Remove from heat, add the crumbled Dor Blue cheese, finely chopped parsley, salt, and pepper. Stir to combine.
- Serve immediately, garnished with parsley leaves if desired.
