Description

A quick and hearty pasta with canned tuna, a spicy tomato sauce, olives, and tangy blue cheese. Perfect for a solo dinner.

  1. Cook the penne in salted water according to package instructions until al dente. Drain, reserving a little pasta water.
  2. While the penne is cooking, finely chop the garlic and chili pepper (remove seeds for less heat).
  3. Heat a pan with a little olive oil (if available) and sauté the garlic and chili for 30 seconds until fragrant.
  4. Add the tomato paste and water, stir. Bring to a boil and simmer for 2-3 minutes to thicken slightly.
  5. Add the drained canned tuna and sliced olives to the sauce. Warm through for 2 minutes.
  6. Add the cooked penne to the pan and toss with the sauce. If needed, add a little pasta water to reach the desired consistency.
  7. Remove from heat, add the crumbled Dor Blue cheese, finely chopped parsley, salt, and pepper. Stir to combine.
  8. Serve immediately, garnished with parsley leaves if desired.
