Hangover Sauerkraut Shchi with Bacon
Description
A rich and sour soup that perfectly invigorates. Sauerkraut, smoked bacon and tomatoes give a bright, rich taste.
- Cut bacon into small pieces and fry in a thick-bottomed pot until fat renders and bacon is golden.
- Peel and finely chop the onion, add to bacon. Sauté for 2-3 minutes until soft.
- Slightly squeeze sauerkraut from brine (if very sour, rinse it), add to the pot and stew with onion and bacon for 10-15 minutes over low heat, stirring occasionally.
- Peel and dice potatoes. Pour 500 ml of hot water into the pot, bring to a boil and add potatoes.
- Boil for 10 minutes. Dice tomatoes (or grate them, removing skin) and add to soup along with mustard, bay leaf and peppercorns.
- Boil for another 10-15 minutes until potatoes are fully cooked. Taste for salt and adjust if needed.
- Remove from heat, remove bay leaf. Let the shchi rest covered for 10 minutes.
- Serve hot, sprinkled with chopped herbs and topped with a spoonful of sour cream.
