Description

Hearty pizza on a potato base with wild mushrooms, mozzarella and parmesan

  1. Peel and coarsely grate the potatoes. Squeeze out excess moisture.
  2. Slice the onion into thin half-rings. Wash, dry and cut the mushrooms into pieces.
  3. Heat a pan with 20 ml of sunflower oil. Fry the mushrooms with onion for 10-12 minutes until golden. Season with salt and pepper.
  4. Mix the grated potatoes with egg, sour cream, salt and pepper.
  5. Heat the remaining oil in the pan. Spread the potato mixture into a flatbread about 1 cm thick.
  6. Fry the potato base over medium heat for 7-8 minutes until golden brown on the bottom.
  7. Flip the potato base with a spatula.
  8. Top with fried mushrooms and onions, sprinkle with thyme.
  9. Arrange mozzarella pieces, sprinkle with grated parmesan.
  10. Cover and cook over low heat for 5-7 minutes until the cheese melts and the bottom is crispy.
  11. Remove from heat, let rest for 2 minutes and serve hot.
