Baked Potato with Shrimp and Aioli Sauce
Description
Tender baked potato with juicy shrimp and homemade garlic aioli sauce
- Preheat the oven to 200°C
- Wash the potato thoroughly, prick with a fork and wrap in foil
- Bake the potato for 45-50 minutes until tender
- For the aioli sauce: separate the yolk from the white, place the yolk in a narrow tall container
- Add 1 garlic clove, wine vinegar and a pinch of salt to the yolk
- Start blending with an immersion blender, slowly pouring olive oil in a thin stream until thick emulsion forms
- Peel the shrimp if not already peeled
- Heat a pan with sunflower oil over medium heat
- Fry the shrimp for 1-2 minutes on each side until pink
- Season the shrimp with salt and pepper to taste
- Finely chop the remaining garlic and add to the aioli sauce, mix well
- Remove the potato from the oven, unwrap the foil
- Make a deep cut in the potato and open it up
- Place the fried shrimp on top
- Drizzle the dish with aioli sauce
- Sprinkle with finely chopped parsley and serve
