Description

Juicy pork baked under a layer of potatoes, onions, tomatoes and melted cheese with a crispy cornflake crust.

  1. Pour hot water over the dried porcini mushrooms and leave for 15 minutes to soak, then squeeze and chop finely.
  2. Cut the pork into 1-1.5 cm thick slices, pound lightly, season with salt and pepper on both sides.
  3. Peel the potatoes and slice into thin rounds.
  4. Cut the onion into thin half-rings and the tomato into slices.
  5. Mince the garlic and mix it with the mayonnaise.
  6. Grease a baking dish with sunflower oil. Layer: half the potatoes, pork, mushrooms, onion, remaining potatoes.
  7. Spread the garlic mayonnaise over the top potato layer and arrange tomato slices on top.
  8. Sprinkle with grated cheese, then with crushed corn flakes.
  9. Bake in a preheated oven at 180°C for 40-45 minutes until golden brown and the potatoes are tender.
  10. Serve hot, garnished with herbs if desired.
