Description

Fragrant Vietnamese soup with beef, rice noodles and herbs. A healthy version with rich broth.

  1. Pour boiling water over the rice noodles and leave for 10-15 minutes to soften, then rinse with cold water.
  2. Cut the onion and ginger in half. Char them on a dry pan or over an open flame until lightly blackened and fragrant.
  3. Pour the beef broth into a pot, add the charred onion and ginger, star anise, cloves, and cinnamon stick.
  4. Bring the broth to a boil, reduce heat to low, cover, and simmer for 20-25 minutes to allow the spices to infuse.
  5. While the broth is simmering, thinly slice the raw beef tenderloin against the grain into almost transparent slices.
  6. Finely chop the green onion, cilantro, and mint. Cut the lime into wedges and the chili pepper into thin rings.
  7. Strain the finished broth through a sieve to remove all spices, onion, and ginger. Return the clear broth to the pot and bring to a boil. Add the fish sauce.
  8. Place the rice noodles in a deep soup bowl, and arrange the raw beef slices on top.
  9. Pour the boiling hot broth over the beef and noodles, covering them completely. The beef will instantly cook and turn white from the heat of the broth.
  10. Sprinkle generously with green onion, cilantro, and mint. Serve immediately with lime wedges and chili rings on the side, to be added to taste.
