- Pour boiling water over the rice noodles and leave for 10-15 minutes to soften, then rinse with cold water.
- Cut the onion and ginger in half. Char them on a dry pan or over an open flame until lightly blackened and fragrant.
- Pour the beef broth into a pot, add the charred onion and ginger, star anise, cloves, and cinnamon stick.
- Bring the broth to a boil, reduce heat to low, cover, and simmer for 20-25 minutes to allow the spices to infuse.
- While the broth is simmering, thinly slice the raw beef tenderloin against the grain into almost transparent slices.
- Finely chop the green onion, cilantro, and mint. Cut the lime into wedges and the chili pepper into thin rings.
- Strain the finished broth through a sieve to remove all spices, onion, and ginger. Return the clear broth to the pot and bring to a boil. Add the fish sauce.
- Place the rice noodles in a deep soup bowl, and arrange the raw beef slices on top.
- Pour the boiling hot broth over the beef and noodles, covering them completely. The beef will instantly cook and turn white from the heat of the broth.
- Sprinkle generously with green onion, cilantro, and mint. Serve immediately with lime wedges and chili rings on the side, to be added to taste.
