Description
Light chebureki with a delicate filling of cod and leek. High protein content and minimum fat make them an ideal dinner.
- Prepare the dough: mix rice and whole wheat flour, beat in the egg, add 1 teaspoon of olive oil and a pinch of salt. Knead the dough, adding water drop by drop if necessary. The dough should be firm and not stick to your hands. Let it rest for 15 minutes.
- Check the cod fillet for bones and finely chop with a knife. Do not use a meat grinder to preserve the texture of the fish.
- Thinly slice the leek into half rings, finely chop the dill. Mix with the fish, add lemon juice, salt and white pepper.
- Roll out the dough thinly and cut out a circle about 18 cm in diameter. Since rice dough is less elastic, it's easier to make one large cheburek.
- Place the fish mince on one half. Brush the edge with water for better adhesion. Cover with the other half, expel the air and carefully seal.
- Heat a non-stick pan greased with the remaining oil. Cook over medium heat for 5-6 minutes on each side. The fish filling cooks quickly, so covering with a lid is optional.
- Serve hot, optionally with a lemon wedge.
