Juicy turkey with spicy pear chutney and fluffy couscous with fresh herbs

  1. Cut the turkey thigh fillet into medium pieces, season with salt, pepper and oregano.
  2. Heat a frying pan with sunflower oil and fry the turkey until golden brown on all sides, then reduce heat and cook until done.
  3. For the chutney, dice the pear, squeeze juice from the lime, finely chop the chili.
  4. In a saucepan, melt butter, add sugar and clove, heat until sugar dissolves.
  5. Add pear, lime juice, chili and grainy mustard. Simmer over low heat for 7-10 minutes until pear is soft and sauce thickens. Remove the clove.
  6. Pour boiling water over couscous in a 1:1 ratio, cover and let stand for 5 minutes. Then fluff with a fork.
  7. Finely chop parsley, mint, cilantro and basil. Mix with couscous, add olive oil and a pinch of salt.
  8. Place couscous with herbs on a plate, top with turkey pieces and drizzle with pear chutney.
