Sweet Indian Pilaf
Description
Fragrant sweet pilaf with dried fruits, spices and a citrus note. A perfect combination of oriental spices and natural sweetness.

- Rinse the rice under cold water until clear. Soak in cold water for 15 minutes, then drain.
- Chop dried apricots, prunes and figs into small pieces. Peel the orange, remove the zest in thin strips and chop the flesh. Remove seeds from chili pepper and finely chop.
- Heat the oil in a thick-bottomed pan. Fry cloves, cinnamon, star anise and chili over medium heat for 1 minute until fragrant.
- Add rinsed rice, turmeric, cardamom and barberries. Sauté for 2 minutes, stirring.
- Pour in water, add sugar, salt, dried fruits and orange zest and flesh. Bring to a boil.
- Reduce heat to low, cover and cook for 15–18 minutes until all liquid is absorbed.
- Remove from heat and let rest covered for 5 minutes. Garnish with fresh mint before serving.
