Juicy meatloaf made from chicken and beef mince with a cheese filling, baked in the oven

  1. Finely chop onion and carrot, fry in sunflower oil until soft, let cool.
  2. In a bowl, combine chicken and beef mince, add egg, sour cream, breadcrumbs, fried vegetables, finely chopped parsley, herbes de Provence, coriander and black pepper.
  3. Mix the mince thoroughly until homogeneous.
  4. Cut Maasdam cheese into small cubes or grate it.
  5. Form a rectangular patty from the mince, place cheese in the center, fold the edges to form a dense 'loaf'.
  6. Transfer the meatloaf to a baking dish, brush the top with ketchup.
  7. Bake in a preheated oven at 180°C for 35-40 minutes until cooked through and golden brown.
  8. Let the meatloaf rest for 5-10 minutes, slice and serve.
